German Pancake

This is definitely a family favorite in our house for breakfast. It's a great comfort food to have with a slice of bacon and some fruit. I love eating them with with a sprinkle of powdered sugar and some boysenberry preserves.  My daughter love eating it plain and always asks for more!


3 eggs
3/4 cup milk
3/4 cup flour
1/4 teaspoon of vanilla
2 tablespoons powdered sugar
1/2 stick (1/4 cup) butter
Cast iron skillet or pie plate

Preheat your oven to 425 degrees.

Put the butter in the skillet or pie plate and place it in the oven while you mix the ingredients.

Beat the 3 eggs with a hand mixer on high speed until they double in size(about 5 minutes).

Now slowly add the vanilla, milk, and flour to the eggs. 

Mix until combined. It should be the consistency of runny pancake batter.

Now pour mixture in hot skillet or pie plate and bake for 20 minutes.

 It will rise like a souffle, then fall when taken out of oven.

Lightly dust with powdered sugar and serve.


Now how yummy does that look! I know what I'm having for breakfast tomorrow..... And I need to get prettier plates.

Happy New Year!



Another year has past with ups and downs, hopefully with more ups than downs. It has been quite a year with the birth of my baby boy in June.  And my beautiful daughter turned 2!



 Between ballet classes for my daughter and being pregnant half the year, my family and I had quite a journey. Here are the highlights...

  • Hubby started writing a book. (stay tuned for more info on his exciting thriller)
  • My daughter advanced to the next class level for her ballet/tap.
  • My son is a rolling maniac!
  • I joined Thirty-One Gift as an Independent Consultant and Qualified in November! 
  •  And a shout out to my AMAZING cousin who is now a doctor! Love you Em! 
Do you know how New Year's Resolutions came about? Way back when Babylonians would return borrowed items and pay off debt. There's a little fun fact for ya. Now people make commitments, goals or projects that they want to accomplish throughout the year.  
 It's that time of year to write down those resolutions! I personally have never wrote down or done any resolutions.  I think it's time to jot some down this year to resolve a few things and set some goals to make this year even better than last.

  1. Lose 20 pounds by May 1st.
  2. Exercise at least 3 times a week for 30 minutes.
  3. Run a 5K. (Signed up for one in February)
  4. Finish all craft projects started.
  5. Promote to Senior Consultant with Thirty-One Gifts by June 1st.
  6. Keep up with this blog!
  7. Have date night at least once a month with hubby. 
  8. Have more outside play time with my kiddos.
There they are! May this year be the best!
