German Pancake

This is definitely a family favorite in our house for breakfast. It's a great comfort food to have with a slice of bacon and some fruit. I love eating them with with a sprinkle of powdered sugar and some boysenberry preserves.  My daughter love eating it plain and always asks for more!


3 eggs
3/4 cup milk
3/4 cup flour
1/4 teaspoon of vanilla
2 tablespoons powdered sugar
1/2 stick (1/4 cup) butter
Cast iron skillet or pie plate

Preheat your oven to 425 degrees.

Put the butter in the skillet or pie plate and place it in the oven while you mix the ingredients.

Beat the 3 eggs with a hand mixer on high speed until they double in size(about 5 minutes).

Now slowly add the vanilla, milk, and flour to the eggs. 

Mix until combined. It should be the consistency of runny pancake batter.

Now pour mixture in hot skillet or pie plate and bake for 20 minutes.

 It will rise like a souffle, then fall when taken out of oven.

Lightly dust with powdered sugar and serve.


Now how yummy does that look! I know what I'm having for breakfast tomorrow..... And I need to get prettier plates.
